Pumpkin Butter Cups
Hey Friends! Hope your week is getting off to an excellent start! I wanted to pop in and share a quick recipe with ya. You know fall means all the pumpkin things and craze has started! Speaking of pumpkin things I ordered this pumpkin spice syrup for my coffee this week and cannot wait for it to come in! Anyway back to the topic of today….Pumpkin Butter Cups! I love to make homemade nut butter cups. I actually do it almost weekly for a little morning treat with my coffee. Earlier this week I had some leftover pumpkin puree from the bread that I had made so I decided to make this little creation and it was so yummy I had to share! Hope you enjoy!

Did I mention I love to make homemade treats in the kitchen? I totally do! While I strive to live a healthy balanced lifestyle I also strive to eat all the ‘healthy’ treats! YOLO! I really enjoy finding ways to make all the foods I love into healthier versions. So with pumpkin season, my love for all the nut butters, and chocolate no surprised I came up with these pumpkin butter cups.
I also love making them in these little silicone cups. It makes them super easy to remove after freezing! I got them at a local Japanese dollar store but here are some similar ones.
For the chocolate coating:
For the filling:
- 2 TBSP Pumpkin puree (not pumpkin filling)
- 1 TBSP Nut butter of choice
- 1 Date
- Honey (optional)
Start off by making the chocolate coating. Mix equal parts coconut oil and cacao powder. Melt the coconut oil, then add the cacao powder and sweetener. I like to make it by using equal parts because it makes a thicker chocolate coating.
Then add just enough chocolate to the bottom of each silicone cup to cover the bottom well. Place in the freezer.
While chocolate is in the freezer start making the filling. I like to add just a bit of water to my date then place it in the microwave for a few seconds. If you do not like doing it this way you can have the date soak in water over night but I can never plan ahead that much.
Once date is soft mix one date with 2 TBSP spoons of pumpkin puree and 1 TBSP of nut butter. I used this cinnamon raisin nut butter to make these and it was amazing!
Take the cups out of the freezer, divide the filling equally amount them and top with remains coating.
Place in the freezer until hard.
