Hey Friends! Tell me how your week is going? I hope it is going great! Today was an amazing day! I had two friends share some amazing news of works and revelations in their lives. I came home crying tears of joy. D looked at me like what in the world! Definitely a day I will not ever forget!

Today I am going to share with you a What I Ate in a day post. I enjoy reading these type of posts so I hope you do too.


I started off the day with two cups of coffee with almond milk and one scoop of Vital Proteins Collagen.

Also not pictured I ate a half of a Mocha Quest Bar because I woke up hungry.


The weather was warm so I decided to skip my normal eggs and go with a smoothie. I have been all about this smoothie lately.

I’ve really been liking this protein powder. I want to try the chocolate next.


I am starting to get a little hungry plus I know I will be having a late lunch so I eat an apple with peanut butter.


On my lunch break, I went to the gym for a quick treadmill workout.


Sidenote: We upgraded our phones recently. My screen was all cracked and my battery was getting really bad plus they had a special. Anyway, when I got to the gym I went to plug in my headphones and noticed my new phone does not have a plugin for headphones! What? Luckily we do have a Bluetooth set at home but it was a tough run with nothing to do but watch the clock. I also felt super old and that technology just needs to slow its roll.

Back to the program….


I am back at work and dig into my lunch. I had leftover stuffed green peppers with kimchi and salsa. It was delicious! Really I promise it was so much better than it looks.


I soon followed up with cold coffee. We sell these in the office and I really need to stay away. They are seriously so good. Sweet but not too sweet.


I get home and meet up with the boys. I am pretty hungry by now. We eat leftovers from grilling Sunday night. On the menu was a detox vegetable salad, grilled salmon and a Japanese sweet potato with ghee.

It’s was a pretty good day of eats.

Question: What is your favorite type of potato? Cold or hot coffee?

    I am one of the very few but very proud who don’t like cold coffee or cold oats! I cannot stand overnight oats! I like my oats and my coffee hot at all time of year 😀 That said, I love a frappuccino, but that is basically ice cream, lol!

      I rarely will drink cold coffee. I never make it at home. I will drink hot coffee in the middle of the summer so I am with you girl! I also heated overnight oats this morning. lol I will eat them cold though.

    Coffee preference is dictated by the weather warm in the winter cold in the summer! I love all potatoes equally I do not discriminate!

      I do like to freeze coffee in ice trays to make smoothies. I live in Japan so due to the freshness I am all about Japanese sweet potatoes and purple sweet potatoes. Soooo good!

    Ha! I don’t even know what left overs are… ESPECIALLY LEFT OVER SALMON – ha! Wait, isn’t that a band name too? LOL!!!! But seriously – I am toooo obsessed – just as obsessed as I am with SWEET POTATOES!

    I do love a good sweet iced coffee on summer afternoons, but I will NEVER change over to iced coffee in the mornings. Or if I’m inside. Hot and cozy all the way.
    Mmmm Japanese potato with ghee sounds incredible. Probably my new favorite thing. Butter and salt is all you need.
    Yay for good friend news!! Obviously you are a wonderful friend for them to want to come and tell you about their good news.

      I am with you about my morning coffee! It needs to me hot. I have been drinking cold canned coffee some. It is really good here. What do you sweeten yours with?
